Ingredients

  • 40 oz 40 pineapple chunks, natural juice (typically 2-20 oz cans)

  • 1/4 cup 1/4 white sugar, granulated

  • 1/4 cup 1/4 brown sugar, granulated

  • 20 whole 20 cloves

  • 4 whole 4 cinnamon sticks

  • 2 lbs 2 bacon

  • 1 package 1 wooden toothpicks

Directions

  • Drain pineapple juice into small saucepan. Place pineapple chunks in bowl.
  • Add white sugar, brown sugar, cloves and cinnamon sticks to the pineapple juice.
  • Bring juice mixture to boil then simmer 5 minutes.
  • Add pineapple chunks to the juice mixture and simmer 5 minutes.
  • Let stand and cool.
  • Place in container and place in refrigerator 24 hours.
  • Preheat oven.
  • Cover sheet pan with foil or parchment paper for easy cleanup.
  • Cut bacon in thirds.
  • Drain the pineapple.
  • Wrap each chunk of pineapple in a cut piece of bacon. Secure with a wooden toothpick.
  • Place wrapped pineapple on sheet pan in single layer approximately 1 inch apart.
  • Bake 10 minutes turn each piece over and bake 10 more minutes or until bacon is crisp and golden brown.

Notes & Tips

  • Place in air tight container and store in refrigerator up to 3 days.
