Ingredients
40 oz 40 pineapple chunks, natural juice (typically 2-20 oz cans)
1/4 cup 1/4 white sugar, granulated
1/4 cup 1/4 brown sugar, granulated
20 whole 20 cloves
4 whole 4 cinnamon sticks
2 lbs 2 bacon
1 package 1 wooden toothpicks
Directions
- Drain pineapple juice into small saucepan. Place pineapple chunks in bowl.
- Add white sugar, brown sugar, cloves and cinnamon sticks to the pineapple juice.
- Bring juice mixture to boil then simmer 5 minutes.
- Add pineapple chunks to the juice mixture and simmer 5 minutes.
- Let stand and cool.
- Place in container and place in refrigerator 24 hours.
- Preheat oven.
- Cover sheet pan with foil or parchment paper for easy cleanup.
- Cut bacon in thirds.
- Drain the pineapple.
- Wrap each chunk of pineapple in a cut piece of bacon. Secure with a wooden toothpick.
- Place wrapped pineapple on sheet pan in single layer approximately 1 inch apart.
- Bake 10 minutes turn each piece over and bake 10 more minutes or until bacon is crisp and golden brown.
Notes & Tips
- Place in air tight container and store in refrigerator up to 3 days.
