Here is a cold twist on an old classic spinach dip. You will love the slight crunch from the water chestnuts! Great with bread, bagel chips, or with crisp fresh veggies.

Ingredients

  • 2 cups 2 mayonnaise

  • 1/2 cup 1/2 sour cream

  • 1/4 cup 1/4 fresh green onion, thinly sliced

  • 8 oz 8 water chestnuts, drained, chopped

  • 1 tsp 1 salt

  • 1/2 tsp 1/2 pepper

  • 10 oz 10 fresh spinach, chopped

Directions

  • Combine and stir together the mayonnaise, sour cream, green onion, water chestnuts, salt, and pepper until well blended
  • Place chopped cooked spinach in several layers of paper towel or a clean cloth towel then squeeze out excess water. Spinach will reduce in size and become compact.
  • Add the chopped spinach to the mixture and stir until well blended with no clumps of spinach.
  • STORE in refrigerator.
