This nostalgic light, fluffy, dark cherry Jello salad will take you back to your childhood. My mother used to make this for most holidays.

Ingredients

  • 15 oz 15 can dark sweet cherries

  • 1 cup 1 dark sweet cherry juice drained from canned cherries

  • 1 cup 1 boiling water

  • 3 oz box 3 dark cherry Jello

  • 10 oz 10 miniature marshmallows (1 small bag)

  • 1 cup 1 cool whip, thawed

Directions

  • Drain the juice from the cherries into a measuring cup. Substitute this liquid for cold water in recipe and add enough water to equal 1 cup.
  • Prepare Jello as directed on the box substituting the cherry juice mixture for cold water.
  • Slice cherries and add to the prepared Jello mixture.
  • Gently stir marshmallows into the Jello mixture.
  • Place in the refrigerator and chill the Jello mixture until it begins to set – approximately 1 to 1 1/2 hours
  • Gently fold the cool whip into the chilled Jello and place back into the refrigerator until completely firm. Approximately 4 hours.
