Ingredients

16 oz cream cheese, softened

1/2 lb sharp cheddar cheese, shredded

2 teaspoons sweet onion, grated

2 teaspoons Worcestershire Sauce

1 teaspoons fresh lemon juice

1 teaspoons dry mustard

1/2 teaspoons paprika

1/2 teaspoons seasoned salt

1/4 teaspoons salt

2 tablespoons pimento, finely chopped

2 tablespoons fresh parsley, finely chopped

2/3 cup pecans, finely chopped


Instructions

Step 1:  Beat Together the first 9 Ingredients

In a mixing bowl, combine the first 9 ingredients: cream cheese, sharp cheddar cheese, grated onion, Worcestershire Sauce, lemon juice, dry mustard, paprika, seasoned salt, salt.

Step 2: Add Parsley, and Pimentos

Add the parsley and pimentos into the cheese mixture.   Pulse until everything is evenly distributed. 

Step 3:  Chill and Form into Ball

Chill the mixture in the refrigerator until it firms up. Then, shape it into either one large ball or two smaller balls.

Step 4:  Prepare Coating

In a separate bowl, combine:

  • 2 Tbs chopped parsley
  • Paprika
  • 2/3 cup of chopped pecans

Step 5:  Roll Cheese Ball

Roll the chilled cheese ball(s) in the prepared mixture of chopped parsley, paprika, and pecans until evenly coated.

Step 6:  Refrigerate

Once coated, return the cheese ball(s) to the refrigerator and chill until ready to serve. Enjoy!

Step 3: Chill and Form into Balls

Cover the mixing bowl with plastic wrap and place it in the refrigerator to chill for at least 1 hour, or until the mixture is firm enough to handle. Chilling the mixture will make it easier to shape into balls and will also help the flavors to meld together.

Once chilled, remove the cheese mixture from the refrigerator and use your hands to shape it into either one large ball or two – three smaller balls, depending on your preference.

In a shallow dish or plate, combine the finely chopped fresh parsley, paprika, and finely chopped pecans. Stir the ingredients together until they are evenly mixed and well combined.
