  • 1/4 cup fresh yellow pepper (finely chopped)
  • 1 tablespoon hot sauce
  • 1 cup mild Cheddar cheese (shredded)
  • 1 cup Monterey Jack cheese (shredded)
  • 60 Toasted Phyllo Shells (4 boxes, typically 15 count per box)

Instructions

  • Preparing Phyllo Shells.
    Follow the recipe forĀ to prepare the 60 Toasted Phyllo Shells before filling.

    In a medium skillet, fully cook 1 lb pork sausage until it turns a golden-brown hue.Ā  Strain any excess grease from the cooked sausage and transfer it to a spacious mixing bowl. Ā Allow the cooked sausage to cool for approximately 10 minutes to prevent premature melting of the cheese.
  • Dressing Preparation.
    In a small bowl, blend 16 oz sour cream with 1 Hidden ValleyĀ® Fiesta Dips Mixuntil thoroughly combined.
  • Combining Ingredients.
    Into the cooled sausage, incorporate 3/4 cup of prepared Hidden ValleyĀ® Fiesta Dip, finely chopped 1/4 cup fresh red pepper, finely chopped 1/4 cup fresh yellow pepper, finely chopped 1/4 cup fresh orange pepper, and 1 tablespoon hot sauce. Gently stir the mixture.
  • Incorporating Cheeses.
    In a medium bowl combine the 1 cup Monterey Jack cheese and 1 cup mild Cheddar cheese.Ā  Add to the sausage mixture until the ingredients are well blended.Ā  Chill the mixture in the refrigerator at least 2 hours up to overnight.
  • Filling the Shells.
    Fill the toasted phyllo shells generously.Ā  Optionally garnish by topping each cup with a half slice of black olive.Ā  Place in the refrigerator and bake within 1 hour or immediately freeze.
  • BAKING:
    Preheat the oven to 350 degrees Fahrenheit (177 degrees Celsius).Ā  Arrange the shells 1.5 inches apart on a baking sheet pan or in an air fryer.
  • BAKING TIMES:Ā 
    Standard oven.
    Bake for approximately 20 minutes and 30 minutes direct from the freezer.Ā 
    Convection oven.
    Bake for 15-20 minutes and 20-25 direct from the freezer.Ā 
    Air fryer oven:
    Bake for 8 minutes and 10 minutes if direct from the freezer.Ā  Ā NOTE:Ā  If frozen, do NOT thaw before placing in the oven.Ā  Remove filled shells from plastic container and place on a sheet pan before baking.
  • FREEZING FILLED SHELLS:
    Generously fill each shell and return them to the plastic tray. Lay the plastic over the shells in the tray.Ā  Place the full tray back into the original Phyllo Shell box. Seal the open end with tape.Ā  I use a permanent marker to label the box with ā€œSausage Fiesta Bites,ā€ baking temperature, baking time, and the current date.Ā  Place the labeled box in the freezer without stacking until the shells are completely frozen.
